Apple Pie Protein Chia Pudding

The combo of creamy chia, aromatic cinnamon-spiced sautéed apples, and the plant-based power of pea protein makes for a breakfast or snack that can be enjoyed as a guilt-free indulgence.

Feeling like it’s more of a brekkie? Let it be that! You can prepare it at home, close the lid and take it with you to the office (or wherever you’re going 🏃‍♀️)


Apple Pie Chia Protein Pudding Recipe:



  • 1 apple, peeled and diced
  • 1 cup soy milk
  • 3 tablespoons chia seeds
  • 1 scoop vegan pea protein powder
  • 1-2 tablespoons honey (adjust to taste)
  • 1 teaspoon cinnamon
  • 2 tbsp of pumpkin seeds (optional)
  • a pinch of salt (optional)



The night before, soak the chia seeds with honey in the soy milk. You add a sprinkle of salt here. Stir well and place in the refrigerator overnight to allow the chia seeds to absorb the liquid and swell.

In a pan, cook the diced apples with cinnamon until they are slightly soft but not mushy.

In the morning, stir the pea protein powder into the chia mixture until well combined.

Layer the chia mixture with the cooked apples and pumpkin seeds in a serving glass.

Garnish with a sprinkle of cinnamon on top before serving.
